Now that Crossroads is back online, it's nice to be able to rec to and from- there, so: in AU - Old West (http://sga.fictionresource.com/fic_index.php?tag=00254) tag, "Hero of the Prairie" (explicit McShep, I think) is a sure bet if you like a Harlequin-like feel. and I haven't read "High Noon" yet, but it's said to have Kolya in it as well, so. :-)

Also, there's A blue true dream of sky (http://untruism.net/stories/?page_id=6) by isilya is a wonderful modern day AU (McShep, at least adult), in which John is a rancher and Rodney a scientist investigating the Wraith plague; a bit of angst, but happy endings all around.

And I can't leave out the crack wonder of the aptly named No Puns, Please (http://1ightning.livejournal.com/94518.html) by 1ightning, AU, McShep, NC-17 in which Rodney is a scientists who moonlights as a sheep rustler, and John is a shepherd who mostly just wants the not-his sheep back.

Not quite cowboy fics, but they are set in the Old West... I have two that are sort of fusions between SGA and the old Young Riders series. Both are team fics:

The first is Atlantis Riders (http://cat-77.livejournal.com/48006.html) and is a sort of intro to the characters.

The second is Riders and Raiders (http://cat-77.livejournal.com/71637.html) and has a few extra guest stars from the SGA universe.
